But I more meant the standard 2:35:1 shots (For the iMAX shots, cropping is the only option). You must have had to crop them quite a bit? Compared to the original uncropped 2:35:1 shots from the 2D transfer.
I was contemplating something similar on a GOTG project I'm working on. I couldn't decide if I should just leave the frames at the aspect-ratio they are presented at (But enlarged to 1920 or 1280 width), or enlarge and then crop them for uniformitty like you have.

Yes the standard 2:35:1 shots have been cropped as well in exactly the same way on the top and bottom by the exact amount required on a shot by shot basis to maintain the 2:35:1 aspect ratio. Like the imax screencaps above its only a minimal amount on the top and bottom that needs to be cropped to maintain the correct ratio, what's more important IMHO is that the top and bottom are cropped equally to maintain composition element positions as much as possible.
Well if you want to crop that changing left sidebar you definately need to crop the top and bottom as well to maintain the ratio of the frame IMHO, otherwise with each different shot requiring a different amount of cropping on the left side, each shot will be getting stretched by a different amount, which I imagine could be pretty jarring watching the shots in quick succession, body/face proportions will be changing all the time.
If you do decide to crop it yourself I should warn you that it'll be a hell of a lot of work. Creating this IMAX release took me many many hours last month, looking back with hindsight, I wonder whether i'd have done it at all if I had known how much work it was going to take, how many hours of my free time it was going to use up. I recommend you just watch my release and save yourself the crazy hours of work required to put this together.
