Personally, I think 'canon' can be arbitrary, depending on the fan. But I wanted to ask what exactly is /officially/ supposed to be canon for Star Wars. Just the numbered movies? Which edits of the movies?

Officially, this is what's canon since the Disney merger:
- Original Trilogy
- Prequel Trilogy
- Sequel Trilogy
- The Clone Wars (2008 movie & TV series - includes the 4 unfinished eps)
- Darth Maul: Son of Dathomir (comic)
- A New Dawn (novel)
- Rebels (TV series)
- Tarkin (novel)
- "One Thousand Levels Down" (short story)
- "Blade Squadron" (short story)
And everything else that comes out from now on.
The 2003 Clone Wars cartoon is no longer canon (the 2008 series contradicts it too many times, I think). I don't think it's been officially stated which versions of the films are canon, but I'd assume it's the most recent Blu-Ray releases.
Which would, unfortunately, mean that Jedi Rocks is canon.
