The only real visual change that I think was well done was the extra footage of the dance lady in the Rancor pit, even though it was pretty much ruined by Jedi Rocks. Unlike the Wampa SE scene, the added material didn't kill the intensity of the scene, and it still left the mystery of what was actually down in the pit for when we see Luke fall in. Sure I still prefer the other way where we just hear the screaming, but I like how the SE gave us a glimpse of terror on her face when she saw the door open. I should also add that it wasn't until recently that I learned that the extra footage was filmed for the SE; I always just assumed that it was extra footage not included in the final cut of Jedi, similar to the Biggs scene.
