Well, I might as well state what my dream blu ray/4k set would be (note, for the most part, I don't know what the special features would be)
Disc 1: ANH OUT
- 1977/1981 scrolls via seamless branching
- 1977 70mm surround, 1977 35mm stereo, 1977 35mm mono, 1985 laserdisc stereo, 1993 laserdisc stereo sound mixes, and a new mix designed to resemble the SE as close as possible (the mixture of stereo and mono dialogue sources comes to mind)
- Special Features: Deleted scenes (all of the original deleted scenes, including human jabba)
Disc 2: ANH Final Cut
- New lossless sound mix based off 1997 elements (for the most part)
- redone CGI to look less dated and fit better with source material
- Ability to choose between OUT-esque, faithful extended and directors cut extended versions of scenes via seamless branching (OUT-esque removes Jabba scene ,extended stormtrooper search, droids hitting each other, cgi dinosaurs, cgi jawa antics, and the biggs scene; faithful extended keeps the extended stormtrooper search and the biggs scene, but removes the more annoying cgi scenes. directors cut extended is basically the special edition scenes in their proper order)
- Han shoots first, while greedo doesn't shoot at all (of course :P)
Disc 3: ESB OUT
- 1980 70mm surround, 1980 35mm stereo, Harmy's despecialized 35mm surround mix, Puggo Strikes Back 16mm mono sound mixes, as well as a new mix that takes the best elements of the 70mm, 35mm, 16mm, and SE mixes (added sounds of 16mm and international, as well as the new star destroyer music cues of the SE. "Bring my shuttle" with it's audio cue will remain though)
- Special Features: Deleted scenes (all of the original deleted scenes, straight from the original source, with no mixing of deleted footage and 2011 footage as seen in the 2011 blu ray special features -.-)
Disc 4: ESB Final Cut
- New lossless sound mix based off 2011 and 1997 elements (for the most part)
- redone CGI to look less dated and fit better with source material
- Ability to choose between OUT-esque, faithful extended and directors cut extended versions of scenes via seamless branching (OUT-esque has the original emperor and boba fett. "Bring my shuttle" and its audio cue are removed, as well as all new shots of vader entering, flying in, and leaving his shuttle. Cloud City flyover transition is recut to resemble the OUT, but retains its SE effects. faithful extended has an Adywan Revisited style emperor (with the video reshot or redone in cgi if neccesary). It uses the old boba fett voice. "Bring my shuttle" and its audio cue are removed, as well as the new shots of vader entering and leaving his shuttle, but the shot of the shuttle flying to the Executor is kept, ala the adigitalman edit. Cloud City flyover transition is recut to resemble the OUT, but retains its SE effects. directors cut extended is basically the 2004/2011 special edition scenes in their proper order. This means 2004/2011 style emperor (with the video reshot or redone in cgi if neccesary), new boba fett voice, and all SE shots are kept in the same order and length as the 2004/2011 SE.
Disc 5: ROTJ OUT
- 1983 70mm surround and 35mm stereo mixes. I don't think the SE's added any new sounds worth noting so a new mix won't be made.
- Special Features: Deleted scenes (all of the original deleted scenes)
Disc 6: ROTJ Final Cut
- New lossless sound mix based off 2011 elements (for the most part) (Before you ask, this does not include Vader's NOOOoooo!)
- redone CGI to look less dated and fit better with source material
- Ability to choose between OUT-esque, faithful extended and directors cut extended versions of scenes via seamless branching (OUT-esque has Napti Nek, Yub Nub, original Anakin ghost, no blinking ewoks, and um... pretty much only the SE fixes would be included here (and maybe the beak of the sarlacc). Faithful extended would keep all of the changes of OUT-esque verson except for showing the slave dancer land in the sarlacc pit and the 97se celebration scene (which may or may not include the jedi temple). Directors cut extended would pretty much be like the 2004 SE's, though having Hayden Christensen as ghost may or may not be doable (wasn't it recorded in 1080p like ep2 and ep3?)
I may have forgotten a few things, but this seems about right.
So basically it would be the OUT and three variations of the special editions, designed to please as many people as possible.
