As you go on and make more videos, your timing will improve and the stammering should go away (unless that's something related to your actual speech pattern, in which case sorry I mentioned it).

See if you can do something about the breathing into the mic. In most cases, when it doesn't overlap any words, you're able to mute it by highlighting it and pressing CTRL+L in Audacity (so as not to mess with the timing).

Unfortunately finding a "sweet spot" for a headset mic is a bit difficult, if you put it in a spot where you don't hear the "pffff", like down to your chin or up higher near the nose, the volume of your voice will be much lower...
