Lucas tried to make the Jedi into Samurai, but just made them uninteresting.
The Clone Wars cartoons (the 2003 one slightly more) did a good job of trying to make them more honorable and chivalrous than in the films, while still making them human.
Had that been stressed more, the main problems with them in the PT might be cleared up slightly.
