Yes I agree, its easy to see throughout the film when they're at sea during action scenes that the position/lighting of the sun and therefore the colour of the sunlight is changing from shot to shot. A little disconcerting at first but as long as the sun's light looks natural in those consecutive shots with inconsistant lighting, its not a big deal and you get used to the sunlight inconsistency throughout the film pretty quickly. It helps that I love this movie. :)

A little bit pumped is quite an understatement, everybody looks completely cooked in this film, a decent amount of desaturation is definately required to get to human fleshtone levels IMHO. Yes the main character is meant to look tanned due to constantly being out on the water but I'm pretty sure he's not meant to resemble the infamous lobster men from Star Wars IMHO.
