There are so many historical figures/events that come up/are mentioned in the EU that are leaps and bounds ahead of the Sith in the interest department, but they only get mentioned briefly or alluded to in vague comments or in articles while series after series focusing on the monotonous, two-dimensional Sith and their homogenous Sith Wars are churned out year after year.

I really can't help but to wonder at how the EU would have developed had the PT never been made. There certainly wouldn't be this one-track fixation on the Sith at any rate.
