The fact that they didn't name him feels more like a hiccup than an intentional story decision.

There was no mention of Boba Fett in any of the deleted scenes in the medical bay. Jabba was the only one mentioned. I don't know where you got this one from but you are completely mistaken.

This wasn't in the medical bay on Hoth, it was right after he got rescued from Cloud City. On the blu ray deleted scenes it can be found.
