PAL DV is 4:2:0 like DVD, so you don't really have to worry about the color space if that is your destination format. There is a difference in chroma "siting" (where the samples are taken from with respect to luma) but chroma on VHS is so hilariously bad that there's no way it makes a visible difference. Perhaps with some 4:4:4 input source a difference could be discerned but I haven't seen it discussed.
