It's not always about picture quality...

So what are the actual differences between Harmy's Despecialized Editions and, say, Team Blu's GOUT upscales? I understand that they approach the problem of preserving the films in very different ways - but if you only look at the end result, are there any noticeable differences between them apart from picture/sound quality?
