This is correct. I just read a book on the history of editing technology called Timeline and in it was of course the history of the Editdroid. The Jedi footage was only used as a demo. The movie was entirely edited on a flatbed editor.
The funny thing is, reading about the Editdroid, Lucas talked up technology so feverously and poured so much money into the development of this incredible machine... Only to barely use it himself and sell it off to Avid in 1994.
