I'm in love with Rebel Strike's II and III. So far, the closest to an OT experience that I've gotten from a video game.

Also, Shadows of the Empire N64. The first (and only) N64 game I've ever owned, and I'm liking it a lot. Once I can get past the first stage, that is. I'm kind of a sucky gamer. :)

I didn't have a Gamecube, but I did buy a Wii.  My first 10 or so Wii games were Gamecube games, and RS II & III were among them.

I've put AT LEAST 10 minutes into each of them.  I just couldn't handle the control scheme.  My controllers all had a huge dead zone, and I found I could't make precise movements at all.  And then the button placement was really weird.

Owning the games, I thought I'd pop them into Dolphin or whatever other emulators were available at the time.  And 1. I found out you couldn't make your own gamecube disc images, so I'd have to go and find a pirate version (which I did) and then 2. No emulators really work with those games.

So I gave up.  But I think from time to time that I'd like to play them... if the controller/emulation situation ever changes.  Here's hoping someone makes a full on PC port/remake.
