Sounds awesome! I'd recommend avoiding changing Qui-Gon's saber, since its somewhat iconic (and not silly). Dooku might be moot, but I personally wouldn't mind. It would help with editors who don't want him to be a Sith, and probably wouldn't hinder the opposite.
