I don't remember the exact release of Bambi, but essentially they decided that for a remaster, they would start by scrubbing all of the grain off the image. Then, they decided that looked too flat and unnatural, so they added grain back. Unfortunately, they didn't know quite how to do it, and for whatever reason they only added it to the characters, which made it look like Bambi and Thumper had the worst case of fleas and lice, and like at any moment their fur was going to crawl off of their skeleton. It was, frankly, disgusting. After that, they decided to just scrub the backgrounds and each cel, resulting in the current "Sleeping Beauty"-type mess.
I agree, Peter Pan has had some over-the-top color correction and some details accidentally scrubbed, but overall, compared to Snow White or Sleeping Beauty, the details are quite minor, IMHO.
Edit: Oh, I think I remember what they did on Bambi - they scrubbed the grain off of the background and then did a "freeze frame" on that background cel, keeping that grain stationary. Unfortunately, they didn't scrub the grain off of each of the character cels, which left the weird "crawling fur" or "fleas" sensation to the film.
