So, I read that there were further changes made to these dvds, like Hayden Christenson making an appearance... any of this true?

Yup.

Check any decent DVD review of the set, every one that I've seen has images to confirm the changes.

Here is a change but its really nitpicky: the explosion of the Death Star has been changed, it looks like it has more of a purple tint and now has a white ring of fire instead of red:

2004 Version

I dont think it's an actual change.

The coloring of the remastering is very different.

I know I’ve made some very poor decisions recently.
