The studios might send their materials to dedicated post-houses rather than doing the post-processing in-house.
Here's the thing: If you spend X dollars on post-production work and the post-house does it wrong, then you still have to spend Y dollars to have them fix it to your specification.
Considering that most studios are giant bureaucracies, then it stands to reason that the extra expenditure of Y dollars usually can't be justified.
Furthermore, I'd bet that untrained eyes are used to evaluate the final product coming out of the post-house in most cases.
JEDIT: ... and untrained eyes are usually impressed with shit like the BttF Trilogy BD release.
