The notion of taking those three movies and condensing them into a single arc sounds great. Are there any projects out there with a similar approach?

TV's Frink used to be and probably still is still the go to guy for Star Wars edit variants.
There have certainly been multi-prequel fanedits.
I'm not sure if there have been any more.

I see nobody else has tried to dramatically cut it down to 90ish minutes yet. Maybe one of these days, I'll fire up Final Cut and give it a shot.

Used to be yes, but I don't do the cutlists anymore. Too much work, not enough return on investment.
