A spin off with an amnesiac one armed Mace Windu who is now a mercenary would be pretty good, especially since there would actually be a story there. But then they would likely do something stupid like have him change his name to Calrissian and have a child.

I actually wouldn't mind if they made a spinoff with a clone of Mace Windu. Palpatine recovered his body after his fall and performed experiments with his DNA, yielding an insane clone, a sort of Jorus C'baoth. I think Samuel L. Jackson could play it well.
I think Samuel L. Jackson wouldn't do a TV series.

Star Wars Episode VII: On Stranger Tides anyone?
I wonder, is the hype of new SW movies the same as when TPM was being made in the late 90s? If so, we may be in for more disappointments. (I wonder if I have said this before...)
I don't think the hype machine has even been warmed up yet. Although avoiding the overkill that surrounded TPM might be a good idea.
Where were you in '77?
Michael Arndt is one of the reasons I have faith in this first installment of the new trilogy. He wrote Little Miss Sunshine and Toy Story 3, both of which were very enjoyable movies. These two credits alone prove that he understands character development, something which the Prequels had none of. Also, he is of the generation that cherishes the OT and recognizes the shortcomings of the prequels (regardless of whether or not he personally enjoyed them). This combination makes him a good choice, IMO.
Since ROTJ wrapped up the series so nicely, he will have a lot of "setting up" to do, which I expect will lead to some of the grandeur of the PT in terms of understanding how the galaxy has changed since then. That being said, if he can keep the story focused and character driven, then we're already looking at a film that should be better than the PT and almost on par with the OT.

I love this idea, although spinoffs taking place during the Sequel trilogy I was hoping would wait a bit... a Seven Samurai inspired movie would fit great as a Live Action Clone Wars type story....

One day we will have properly restored versions of the Original Unaltered Trilogy (OUT); or 1977, 1980, 1983 Theatrical released versions (Like 4K77,4K80 and 4K83); including Prequels. So that future generations can enjoy these historic films that changed cinema forever.
