If you mean the shot of the Falcon passing the camera followed by Slave 1 after the Imperial fleet go to lightspeed, that was in the SE.
As for the new Emperor, I honestly think that the new one looks pretty bad. It doesn't look like him at all. We're better off with the dark, "we can barely make him out" look of the original. Who cares if it's a chimp?
