Here are a couple that you can't go wrong with:

1. Harmy's Despecialized V2.0 - this is not finished yet but Star Wars will be available this summer. This is a theatrical recreation sourced mainly from the blu-rays and various other sources. There is already a V1.0 that came out last year, but you should definitely wait for V2.0. It looks light years better. This may also have the most accurate color timing of any other version as well. Empire and Jedi will come later.

2. Dark Jedi's Original Theatrical Trilogy - These are based off the 2006 theatrical dvds. Version 3 is available on myspleen, but keep in mind, they are also working on a new and improved blu-ray version which is supposed to be a big improvement.
