I am working on exactly this in my spare time.  TMBTM's Dusty version is my favorite edit to date, and I was inspired to do as you suggested.  I have only just begun but I am already convinced this is the way to go.  I just got the Blu-rays and will be doing it in HD and with the updated Yoda graphics from Phantom Menace.  This edit is strictly to satisfy my original view of Star Wars before 'A New Hope'

I always felt the prequels were too modern compared to the original trilogy, and adding the old black and white film look helped to make it feel less modern.  It also helps in erasing the obvious CGI looking moments and making them look more natural.   Gone is the horrible dialogue, and John Williams' score takes center stage.

And where am I starting?  I'm taking a cue from Topher Grace's  edit (feedback anyway)  I'm starting in the middle of the saber battle with Maul, and I am quickly getting into AOTC with a grown up Anakin.  Never liked the Kid, gungans, or the age difference between him and Padme.  Also all 3 movies will be combined in one. 

I'm not going to put a timetable on this but would be more than willing to discuss ideas.
