As for how to cut scenes like that, it all depends on the scene. For the escape pod sequence, I personally would show it being deployed, and give the impression the droids short circuited/passed out, and "woke up" with the Jawas.

I was able to cut Ep. 1 down to an hour, so that may be a way to start... get each film to an hour, then cut them down from there. 6 hours to 4 is going to be much easier than 14 hours to 4.
