I love it that this debate is started up again (here I was going to thank Adywan for going with blue).
I remember wondering if the Death Star TIEs are supposed to be the "norm" or the Death Squadron TIEs are supposed to be the norm. We had no real way of knowing, except that the EU (except for some of the early toys and comics) stuck with gray after the movies.
You could look at it this way:
1) The TIE fighters associated with the Death Star are gray, further emphasizing the cold, gray terror of that station (and yes, Vader's TIE is among them... what you, think he flew over on that thing? He obviously would have come on a shuttle).
2) Once the station is destroyed and Vader begins his rise up the Imperial ranks, he gets the infamous Death Squadron, Executor, etc. together to search for Skywalker. Blue TIEs to go with his blue/purple Super Star Destroyer, and of course the new Interceptors and bombers that were blue as well.
The rest of the TIEs in the galaxy are, of course, caution orange.
Anyway, 2020 is a long ways away, so we don't have to get all bent out of shape over this.
