Do you mean the snowspeeder that Veers guns down just before blowing up the power generator?
Although I haven't spent nearly the amount of time researching the other films as I have the original Star Wars, I'm sure this is another sound mix issue. The ESB SE also uses Luke's line "You're lucky to get out of there" as opposed to the more conventional "You're lucky you don't taste very good" after the swamp monster spits out R2. Some people thought the line was changed and added for the SE, it was not. It was there all along, just in another sound mix. Which mix I'm not sure, 70mm perhaps. It is also in the original "Story of" recording for ESB.
Another instance of this is in ROTJ. When Lando is being pulled into the Sarlacc Han says "It's alright, trust me" but in the SE he says "It's alright, I can see a lot better." Just another difference between sound mixes and again we find the SE line in the original "Story of" album.
So it's difficult to say what the "complete" version of each film is. I think it really comes down to personal preference. But I find it all to be very fascinating.
