I'm going to play devil's advocate here and say that Lucas was against colorization which was typically done by a studio rather than the director or anyone previously involved in the film. Making that speech is 100% consistent with Lucas' insistence that movie studios are completely awful. It's not as hypocritical as one might think, simply because he doesn't attack anyone who makes changes to their own movies (as far as I'm aware.)

Lucas is the studio.
