Off the top of my head:

I thought that Obi Wan would be the main character, and the films would focus on how his hubris helped bring about the fall of the Republic

The Mandalorians would be the main adversary (cloned super soldiers in powered armour)
The Emperor was not a Sith
Obiwan and Anakin would both be older from the start
