Well they took the 1997 Special Editions to Lowry Digital who scanned the negatives and remastered them, and in doing so, wiped the grain out of the picture. Then the colorist over saturated the look of the film (possibly to make it look more in line with a more modern looking film like the prequels rather than the 25-30 year old films they actually are). Then they added more special effects, sound effects, a bit of subtle re-editing and voila!
