So... you were playing the game as each DLC came out... you played Anchorage and Pitt as they came out, but didn't finish the actual game until just before Broken Steel came out?  And then you played Broken Steel and Point Lookout and Mothership as each one came out, a couple of months apart?

You've just jogged my memory a bit. You're right, Operation Anchorage and The Pitt came out before Broken Steel, which was the DLC to raise the level cap and let you continue beyond the game. I remember a bunch of people were up in arms over it being released last of the three. Now I remember I had beaten the game a couple of weeks before Operation Anchorage was released, and eagerly bought it up the first day because I was still on a Fallout 3 kick and ready for more. After playing it and really enjoying it and the different style of game play it brought, but not being sure if I felt it was worth the money I spent on it, I decided to wait to hold off on buying The Pitt until after Broken Steel, which I knew for sure I really wanted.

Now that I think about it, I don't think I ever got around to buying The Pitt until it was on a discount one week sometime before Mothership Zeta came out. After really enjoying Broken Steel, the trailer for Point Lookout completely sold me on buying it the day it came out (it ended up being by far my favorite DLC too), and I also bought Mothership Zeta on release day. After buying and finally playing The Pitt (at which point I was a bit Fallouted out) I realized storyline wise it was by far one of the best (maybe the best) piece of DLC for the game, and would have been a way better purchase than Operation Anchorage.

There are currently three FO:New Vegas DLC's.  WikiP tells me that at least two more are on the way and possibly as many as three more after that.  So maybe I'll take my well earned break from Fallout after I finish 3 so that I can score a deal on the GotY edition of New Vegas.

I was so excited about Fallout New Vegas, I probably would have been wasting my money buying those as they came out, but after the horrible glitchy experience I had with the game, I've had no interest and haven't even kept track of them.

I bought the very first one because the reviews were good, and because I managed to finish all the main New Vegas achievements just a few days after it came out, and I really felt the need to go for 100% after putting all that hard work in (plus I have always been curious if they take away your 100% status for games that have DLC released after you got 100% on them, and it felt like a good opportunity to experiment. Turns out they don't, New Vegas still appears in my list of 100% games).

That first DLC was pretty good, but after buying the game on release day, then facing all those game breaking glitches that weren't patched until after the game already dropped to half price, then seeing the game I paid $60 for on release sell at a regular price of $15 brand new only a little over six months after it was released, I haven't really felt like spending another penny on it.

Maybe once the game gets to be $15 used for the GOTY edition, I'll grab it to check out the rest of the DLC.

I've had a stray thought to delete the Broken Steel DLC so I can experience the ending of the game without it.  And then add it on later for the "authentic" experience.  But I think I'm actually (literaly) too lazy to do that and I'll just youtube it.  Suggestions?  (I'm also worried that though I haven't "done" anything with the DLC, it might still create shenanigans with my save file...)

Actually, you've probably "done" somethings WITH the DLC you just don't know about. It added quite a few new perks to the game, and some other changes/additions, likely you've taken advantage of some of those already without realizing. I'd just leave good enough alone, and youtube the ending if you feel you need that authentic experience.
