What do you LIKE about the EU?

I like a lot of the EU. I think the massive non-film-story presence is part of what makes Star Wars so great many times (though it can be a curse).

I liked most of the pre-Travissty expansion on Boba Fett. It really did build off the mystique and intrigue of the character (though I never liked the idea he was Jaster Mereel). Same is true for the Mandalorians. I loved the Open Seasons series, too.

I've been reading through all of the novels I can get my hands on in chronological (in-universe) order recently, and I'm just now getting up to The Phantom Menace, and I must say they've all been fairly enjoyable reads. The Jedi Apprentice series was pretty good, the Darth Bane books were quite good as well.

By far the best Star Wars book, and one of the best books period, that I've ever read was "The Life and Legend of Obi-Wan Kenobi". Just an absolutely fantastic read, and very emotional as well. It really makes you feel for Obi-Wan, and ties the PT and OT together as well. Imagining Luke reading about the Clone Wars gave me chills, I have to say.

I also liked Shadows of the Empire, even though it's a pretty poorly-written book.

And lets not forget KOTOR. Probably one of the consistent best pieces of Star Wars EU out there, both the games and the comics, and the novels. Not many things have captured the feel of Star Wars as well as KOTOR.

Of course, on the flipside of that you have books where they do poorly. Some of the one-off short stories I've read in my novel quest have been lame. Even some of the larger series like the New Jedi Order stuff is pretty bad (you just don't kill Chewie, sorry), and, of course, like I mentioned before, Karen Traviss can just fuck right off.

So, I mean, there's the bad, and there's the good. It all adds to your personal canon, or it doesn't. Either way, there's a whole other window into the Star Wars universe in the EU that's really fascinating, and I don't think it should be missed.
