Partly because of all the iterations of the myth of a planned episodic saga a trilogy of trilogies was the most publicly touted and giving us a final trilogy (if it was a well made trilogy naturally) would in a way fulfill a covenant with people who followed the saga from the beginning (we were promised nine...mostly, then were told we only get three, then got three more which weren't very well made, we sort of deserve three good new ones as compensation).
Then there comes the potential left over in the story which is rather fertile ground for a film trilogy (if you largely ignore the EU).
The PT is about how a badly maintained democracy and an un-cherished peace can lead to division and open the door to war, chaos and tyranny.
The OT is about resistance to tyranny and fighting to restore an idealistic vision of a kinder society.
A ST could be about the reality of trying to match that idealism with the consequences of the war and what caused it, basically building the peace. Will the heroes become the new villains or will they manage to fulfill the dreams they fought for?
If the PT was made properly we would have cared about Anakin and his fall would have been emblematic of the fall of the Republic.
Luke's redemption of his father in the OT (if ROTJ was done a bit better) would have saved the character we cared about in the PT and cleared the way for the heroes of the OT to be (like Anakin before) the focus of the next stage of the grander saga, the struggle to rebuild or start afresh (or fail and become new tyrants).
New characters could present challenges to and perspectives on what they attempt to do once they have won their war.
If the PT should have be a decent into darkness and the OT the fight to keep a spark of light alive a ST could complete the cycle (but it would have to be well written and well made).
