I know I'm a bit late to the discussion, but, Asaki, have you checked out Moth3r's PAL laserdisc preservation? If I remember correctly, the PAL laserdiscs had less DVNR than the GOUT or NTSC counterparts. If PAL is an issue for you, then you can check out Doctor M's Reinventing the Wheel conversions of these sets. Also, Lee Thorogood's set is sourced from a set with less DVNR, you may want to check those out when they are released.

Also, more non-DVNR releases of the original unaltered trilogy include the Star Wars widescreen bootleg that Moth3r found, the widescreen Catnap bootleg, the Puggo Grande, the Stjarnornas Krig, or any of the old Star Wars VHS releases (though these were in full screen).
