They don't have the interviews that were on the DC though; most of the earlier fan transfers didn't either, but there is a bonus disc out there that someone made with the interviews collected on it, but it's probably hard to find. Frankly, the bonus material was equally parts weak and short so you aren't really missing much, just pull out your Laserdisc if you want to watch them.
Dr_Gonzo's fourth disc (Supplemental Materials) has nearly all that stuff from DC preserved.
And another 4th disc by Farsight @myspleen.
Those two might not be so hard to find . . . from a certain point of view

This is a transfer of the 1982 Star Wars "Video Rental Library" videocassette.
This VHS tape was the first ever commercial home video release of Star Wars. It
features a full screen pan and scan transfer along with the original 1977 Dolby
Stereo sound mix.
