In the EU, they are in orbit around a star that belongs to the galaxy but which is high above the galactic plane.
In the real world, our planet is located in the outer rim of the Milky Way galaxy. If you happen to be in a rural area without any light pollution during a night with clear skies, you could see most of the galaxy as a band where the stars are denser than otherwise.

Escape pod into an asteroid field? No, that does not make sense. You use a pod when you want to be rescued, and there is nobody in the asteroid field that could rescue you except for the Imperial fleet.
If he wanted to get away, he could choose a good shuttle that just happened to carry a hyperdrive. He was supposed to get a shuttle anyway, and as captain he could choose any shuttle he wanted. Then, he could just command the shuttle to enter hyperspace after takeoff.
