I to would think that if they were outside of a galaxy looking at a galaxy that the light from it would drown out any light from the other stars (Right or wrong? Im not a science major by any means) which is why the nebula idea gave me such a relief. And yes I know Star Wars doesnt have to go by reality but it is interesting nonetheless.

Actually, that's not true. Galaxies are surprisingly dull to the naked eye. And think about it this way, how can a neighbouring galaxy drown out the light of another galaxy that you're actually closer to (the one you're in)? If that really were a galaxy at that apparent distance, it would be much, much dimmer and hazy in appearance. I think we've all been spoiled by decades of ever-more beautiful astronomical photography which is so rarely true-colour or luminosity. The Sun is approximately 100 times further away than it is in diameter. Proportionally, the Andromeda Galaxy would have to recede tenfold from its current position, at which point it would be invisible to the naked eye. So that gives you a very (very) simple idea of how much feinter galaxies are in reality.
