The blood is easy to explain: they hadn’t yet come up with the idea that a lightsaber cut cauterizes the wound and prevents bleeding.  I think they came up with that idea when filming ESB so Luke wouldn’t be suffering massive blood loss during his final confrontation with Vader.

Perhaps that’s something that should have been corrected for ANH-97 or -04.  Whatever.

Well, people mistakenly assume that burned = sealed and therefore no bleeding. Such cauterization is certainly possible when performed surgically, but it's by no means 100% successful. It's a misconception that movies reinforce all the time. Burns victims can die from blood loss very quickly. I agree that a light saber is fast and white hot and would probably seal the wound, but it's no guarantee, and if it didn't then there would indeed be a lot of blood.
