You wouldn't need to use footage from LOTR — Lee has been in scores of films, and AFAIK Dooku has Lee's natural hair, so even interview footage would do if you just needed his head. Voice recordings would be even easier, if we wanted to make him a Fake Shemp, which would almost even be appropriate for his character.
