Seriously though if you are going for the whole saga rather than introducing the lady to the world of Star Wars (and for that I'd go for the best OUT you can get your hands on).

I'd only pick fan-edits of the PT (Slumberland, JasonN, Magnoliafan, Phantom Editor via ADM) anything with a decent enough rep to take as much of the pain out of watching the official versions as possible.

I'd go for ANH:R and Ady's ESB reconstruction (for the time being) to represent 4 and 5 and you might as well put the official DVD of ROTJ in (for the time being) too.

I'd watch them in 456123 order myself but it's up to you.

123456 has the benefit of getting better in the middle as the story progresses and number 6 will come as a bit of a nod to the first 3 in terms of story quality.
