Well, without the direct rip from Avatar's approach to Hell's Gate(which was done by ILM btw), the idea of Endor providing resources makes sense. Deforestation, strip mining, etc, etc.
But instead of blue cat people we have Ewoks and Star Wars.
i hope i don't get defined as an avatar fan, as i can't stand the film. however much it may seem like a rip off as an idea, the way it is portrayed and combined with numerous alternative elements will play it down. it can just be a convenient "look how nasty the empire is" moment.
i'm sure avatar isn't the first film to feature an environmental issue (although i scratch my head to think of another sci-fi with deforestation)

You said yourself you thought of Princess Mononoke, not Avatar. Avatar is derivative as all get out.
But then so was Miyazaki, Tolkein, and numerous other writers and filmmakers.
We keep seeing the same themes pop up in numerous films and books because they resonate with people.
SW is derivative too. It took classic storytelling structures and themes, gave them new environments and settings, and used cutting edge vfx.
They work.
