Actually, I'm not quite conviced of this. This is a really quick and kind of crude way to do it but: depending on the shot you chose you could simply select and freeze frame a background, then roto in a ship flying past.
And again, sometimes I think they are a very appropriate type of shot to use.

One of my favorites is from ROTS right after Obi's line: "Another happy landing!" A really nice flyby shot! :D

Forget space camera placement and all that jazz, 'cause the real skill is in piloting that ship as close as you can to the camera without taking out either the camera itself or the crew.
Trust me on this, when you've done one successful flyby, you'll want to do 'em over and over again.
