The story goes that the S-foil design proved to be more versatile and allowed for more firepower, so the Z-95s was eventually replaced by it. I think a real X-wing kind of mitigates the notion of technological escalation from the war in a way, but I do think Y-Wings make sense because they are supposed to be pretty old in Episode IV, and the only reason they keep them around is because they were built so friggin' tough that they're managed to last 20+ years of service.
