For one, Jedi are not ones to allow individuality. I think a pig headed Jedi council who only allow Blue Sabers makes them look drunk with power. It really works well for a better story

that is also part of the reason, another is that george lucas originally envisioned the jedi just having blue lightsabers. the only reason luke had a green one in rotj was because the original saber blended in with the tatooine environment.

oh and another reason why windu has a purple lightsaber was because sam persuaded lucas to give him the color purple and then the eu made up some bullshit story to cover it up

the all blue lightsabers in the prequels would be a return to lucas original vision
