Personally, I think a lot of the scenes they cut would have cleaned up some of the plot holes in the film (what was Nero doing all those years?) and strengthened the character relationships (specifically Spock). The only scene that I don't think should be put back in is the scene where Kirk apologizes to the Orion girl who ends up not being Gaila. There is really no reason to include a whole scene to set up one joke, there is no plot or character development there. Honestly, It almost makes Kirk look more douchey, which probably wasn't the intention.
