They do run for cover very quickly which is bizarre behavior for best troops, especially when facing guys aimed mostly with bows, arrows and rocks (that armour hardly deflects blaster fire so it should at least give them some protection against impacting objects).
Every time I watch it I'm reminded of King Arthur and his knights shouting "Run Away!" in Monty Python And The Holy Grail.
Seeing as most stormtroopers and AT-ST's look the same it should be possible to keep some of them there and still have others running (presumably giving chase rather than running away at first).
As the battle gets more intense and the Ewoks start using captured materiel and the Rebels crack out bigger guns then we should see them taking cover.
Ewoks with throwing axes would be a good addition (they could get in the gabs between the armour plates).
It would be cool to see a stormies head fly off because of a throwing weapon or a booby-trap.
The armour and the fauna does allow a little give when it comes to violence, it needn't be Tom Savini but it should be more effective than silly shots of Ewoks smacking Stormtroopers with sticks.
Perhaps something like a throwing star but made of wood with bone or stone inserts could also be used.
Weapons like that common throughout history and across the world and turn up in lots of films so perhaps it might be possible to sample from other films.
They travel rather quickly so it might be possible to get away with CGI for the weapons in flight.
The Ewoks may have made use of metal they had found while fighting the Imperials and have some captured weapons which the Rebels have given them a bit of training with.
