Now that's sounding like the end of any of the prequels, especially TPM. :)
The sequence of events is fine as is. At no time in the past or present did I have any trouble with the sequence. Both "hits" are necessary to the film: The probe lands on Hoth after we see them being launched, then Luke sees it land and gives him the motivation to go check it out. The probes are being launched throughout the system and although Hoth is probably a huge place, I don't see why the Empire would send two to the same planet when they are making a blanket search.
