In regards to the camera moving all over the place, you have stable cockpit shots you could use for the cockpit element.  Rather than keep the original shot  or any part of it (such as blue-screening the mock-up background onto the original shot) maybe you could do one of 2 options:

Yeah it can work. No need to track the footage. Just create a plate and imitate the movement.

no it can't work. you can't just create a plate & imitate the movement  because you need long enough footage of fast moving ground for this to be able to work. There isn't any shots in ESB what i could use because of all the other elements in the shots. I can't use the snowspeeder search because the speeder is flying over the mountains so the ground isn't flat like the AT-AT battle so a total mismatch.  the only way to do this would be to find a movie that has a long enough flyover of flat snow covered ground.
