Yeah, but to me "Skywalker" is the Star Wars equivalent to "Jones" or "Smith" in the US. Who knows how many Skywalkers are running around in that universe?
Of course "hiding" Luke away from Vader by giving him to Vader's step-brother and keeping the "Skywalker" name wasn't too smart in the beginning, but what're you going to do? :)
Another random thought: what if Vader was the real last name of the family? Vader would have no need to hide his identity, and Luke would have every reason. It made no sense that the one in hiding retains his original name and the man looking for him has to change his.
But then again this is George Lucas' STAR WARS... (sigh)
