I've always liked this. I think its like they program the computer where they want to go, and it automatically points them in the right direction instead of just going really fast straight forward. It also helps explain why everyone falls over and R2 rolls back into the hole when no one really seems to notice when they just go to lightspeed when they're already pointing in the right direction.

EXCELLENT POINT! space is three dimensional boys and girls. so the Falcon is going to the jump coordinates which are "above" them relative to thier postion.
