If I were to go back and start from scratch I'd make Anakin about the same age as Obi Wan and a navigator/great pilot on a Spice Freighter (just like Owen Lars claimed he was). I'd give him Leia's dark hair and a bit of Han's cynical edge. He helps Obi Wan during Episode One and sensing the Force is strong in him Obi-Wan takes it upon himself to train him as a Jedi (no Qui-Gon needed).

Luke and Leia's mother would be a Queen about to be married off for political reasons to Bail Organa (and have Luke's blonde hair) and she would be on the wrong side of the conflict. So instead of the petulant child/teen Anakin we'd have a headstrong worldly wise Anakin and a younger woman who is being used as pawn in a political game standing up for herself against the system. Padme is a very silly name that would need to be changed and she would live long enough for Leia to remember her.

It seemed that Lucas was replicating the Luke/Leia thing too closely only with actors who couldn't rise above the limited dialogue.

Both Anakin and Luke say things like "It just isn't fair" or accuse people of holding them back, both Padme and Leia are Senators and leaders but also capable fighters in their own right but where Mark and Carrie pull it off Hayden/Jake and Natalie don't.

The one thing I did love about the prequels was the idea of the main villain working both sides of a conflict to a secret third agenda that should stay but I'd have had it so he didn't really care which side won as either way Palpatine would be the ultimate victor.

He seems to be the same with the Luke/Vader duel in Jedi, either Luke kills his Vader and he gets a new apprentice or Vader kills Luke and sinks deeper into the dark side and kills his only chance of removing Palpatine from his throne.
