Giving the Taun Tauns ears movement could well be an impossible task and keep it looking real at the same time. I'll give it a go but i'm not promising anything

One thing you could do is watch a few shows with goats, cows and other animals with similar ear shapes and just watch how their ears move. For example: every so often the ears on a pig or cow will twitch or wiggle rapidly for a second or two. You could even have the ears prick up right before or during the Taun-Taun acting up as it hears and smells the Wampa approaching.
